Imperial Caviar is “Golden Osetra,” sometimes known as “Royal Caviar” and is obtained from albino (or white) sturgeon. It is among the rarest of caviars. The term “Royal” comes from the fact that in the past such caviar was reserved for royalty only. Such Imperial Caviar has been sampled by the ancients, celebrated by Czars and the Russian Court, and reserved for the tables of kings. Medium in size, the eggs have a golden color and the flavor becomes smooth, creamy, and delicate.

ABOUT CAVIAR

Caviar refers to the salted eggs (roe) of the fish species sturgeon. Caviar comes from the Persian word Khaviar which means “bearing eggs”. Caviar is considered a delicacy and is eaten as a garnish or a spread.

HOW TO USE CAVIAR

Caviar should always be chilled when served. For purists, caviar is best eaten alone. Use a special spoon made of bone, crystal, or mother of pearl (metal spoons are believed to alter the taste) to eat the beads. Caviar should be served and consumed in amounts smaller than a tablespoon.
